Chicken and Rice Congee is a warm and comforting Asian rice porridge that combines tender chicken with the subtle spice of ginger. This healthy dish is a perfect one-bowl meal—nourishing, high in protein, and easy to digest. Ideal for breakfast, lunch, or a light dinner.

Ingredients

  • 90 grams of brown rice
  • 2 cups cold water
  • 2 chicken drumsticks
  • ½ tbsp fresh ginger, sliced into strips
  • Salt, to taste

Instructions

  1. Rinse the brown rice thoroughly under cold water, gently scrubbing to remove excess starch. Drain any milky water.
  2. In an Instant Pot or pressure cooker, combine rinsed rice, chicken drumsticks, ginger, and cold water. Do not add salt at this stage.
  3. Close the lid and cook on high pressure for 30 minutes.
  4. Allow the pot to release steam naturally. Open the lid carefully.
  5. If the congee appears too watery, press the Sauté button and cook until your desired thickness is reached.
  6. Season with salt. Use a fork to separate chicken meat from the bones and mix it back into the porridge.
  7. Serve hot and enjoy.
