Ingredients
- 90 grams of brown rice
- 2 cups cold water
- 2 chicken drumsticks
- ½ tbsp fresh ginger, sliced into strips
- Salt, to taste
Instructions
- Rinse the brown rice thoroughly under cold water, gently scrubbing to remove excess starch. Drain any milky water.
- In an Instant Pot or pressure cooker, combine rinsed rice, chicken drumsticks, ginger, and cold water. Do not add salt at this stage.
- Close the lid and cook on high pressure for 30 minutes.
- Allow the pot to release steam naturally. Open the lid carefully.
- If the congee appears too watery, press the Sauté button and cook until your desired thickness is reached.
- Season with salt. Use a fork to separate chicken meat from the bones and mix it back into the porridge.
- Serve hot and enjoy.
