  • 2 cans black beans, drained and rinsed
  • 12 corn tortillas
  • 3 chopped tomatoes
  • ½ cup sliced black olives
  • 2 cups chopped onion

Directions

  1. Preheat the oven to 350°F (175°C).
  2. In a large pot over medium heat, combine onion, garlic, red pepper, cumin, salsa, and black beans. Cook for 3 minutes, stirring frequently.
  3. In a baking dish, arrange the corn tortillas evenly, overlapping if needed.
  4. Spread half of the bean mixture over the tortillas, then sprinkle with half of the shredded cheese.
  5. Repeat layering with remaining tortillas, bean mixture, and cheese until the dish is filled.
