Egg Muffins Recipe


Preparation Time: 10 minutes | Cooking Time: 20 minutes | Servings: 6 (12 muffins)

Ingredients:

  • 8 large eggs
  • 1/2 cup chopped spinach
  • 1/2 cup crumbled cooked bacon
  • 1/2 cup shredded cheddar cheese
  • 1/4 cup heavy cream
  • Salt and pepper, to taste

Directions:

  1. Preheat oven to 375°F (190°C) and grease a 12-cup muffin tin or line with silicone liners.
  2. In a mixing bowl, whisk together the eggs, heavy cream, salt, and pepper.
  3. Fold in spinach, bacon, and shredded cheese.
  4. Pour the mixture evenly into the muffin tin cups.
  5. Bake for 18–20 minutes or until the muffins are puffed up and lightly golden.
  6. Let cool slightly and remove from the tin. Store in an airtight container for up to 5 days.
