Ingredients:
- 8 large eggs
- 1/2 cup chopped spinach
- 1/2 cup crumbled cooked bacon
- 1/2 cup shredded cheddar cheese
- 1/4 cup heavy cream
- Salt and pepper, to taste
Directions:
- Preheat oven to 375°F (190°C) and grease a 12-cup muffin tin or line with silicone liners.
- In a mixing bowl, whisk together the eggs, heavy cream, salt, and pepper.
- Fold in spinach, bacon, and shredded cheese.
- Pour the mixture evenly into the muffin tin cups.
- Bake for 18–20 minutes or until the muffins are puffed up and lightly golden.
- Let cool slightly and remove from the tin. Store in an airtight container for up to 5 days.
