Ingredients:

  • 1 cucumber
  • 1 egg
  • 3 oz. flax seeds
  • 3 oz. mozzarella, grated
  • 1 tablespoon water
  • ½ tablespoon butter
  • ¼ teaspoon baking soda
  • ¼ teaspoon salt

Instructions:

  1. Crack the egg into a bowl and whisk it.
  2. Sprinkle the whisked egg with flax seeds, grated mozzarella, water, baking soda, and salt. Whisk the mixture until well combined.
  3. Preheat the air fryer to 360°F (180°C). Toss the butter in the air fryer basket to melt.
  4. Separate the egg mixture into 2 portions. Pour the first portion into the air fryer basket and cook for 1 minute on one side.
  5. Turn the wrap over and cook for another minute.
  6. Repeat with the remaining egg mixture to make a second wrap.
  7. Cut the cucumber into cubes and place them in the center of each wrap.
  8. Fold the wraps around the cucumber cubes and serve immediately.
