Instructions


  1. In a skillet over medium heat, melt 1 tablespoon of butter and cook the ground beef for 8–10 minutes until browned. Transfer to a large mixing bowl.
  2. In the same skillet, add the remaining butter and sauté the chopped onion and garlic for 10 minutes until soft and aromatic.
  3. Add the pumpkin and cook for 5–6 minutes. Then stir in the broccoli and cook for an additional 3–4 minutes.
  4. Combine the cooked vegetables with the ground beef. Mix in 2/3 of the shredded cheddar cheese and the Dijon mustard. Set aside.
  5. In another bowl, whisk together the eggs, heavy cream, salt, and pepper until well blended.
  6. Preheat your oven to 350ºF (175ºC).
  7. In a greased baking dish, spread the beef mixture evenly. Pour the egg mixture over the top and sprinkle with the remaining cheddar cheese.
  8. Bake for 25 minutes, or until the top is golden and the center is set. Let it cool slightly before serving.
