Ingredients
- 2 pounds chicken drumsticks (skin-on)
- 1/3 cup balsamic vinegar
- 1/4 cup honey (or keto-friendly substitute like allulose)
- 4 cloves garlic, minced
- Salt and black pepper, to taste
Instructions
- In a small bowl, whisk together balsamic vinegar, honey (or substitute), minced garlic, salt, and pepper.
- Pour the sauce into the Instant Pot and place chicken drumsticks on top. Press the chicken down so it's submerged in the sauce.
- Lock the lid and cook on high pressure for 20 minutes.
- Once done, use the quick release method to let the steam out.
- Turn on the sauté function and let the sauce simmer and reduce for extra flavor.
- Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper.
- Transfer the chicken to the baking sheet and broil in the oven for 4 minutes until slightly crisp.
- Remove from the oven, pour the thickened balsamic sauce over the top, and serve hot over keto tortillas, lettuce cups, or cauliflower rice.
