Juicy Instant Pot Chicken for Low-Carb Tacos

Juicy, fall-off-the-bone chicken drumsticks are cooked in a tangy balsamic-garlic glaze and lightly broiled for the perfect texture. Ingredients

  • 2 pounds chicken drumsticks (skin-on)
  • 1/3 cup balsamic vinegar
  • 1/4 cup honey (or keto-friendly substitute like allulose)
  • 4 cloves garlic, minced
  • Salt and black pepper, to taste

Instructions

  1. In a small bowl, whisk together balsamic vinegar, honey (or substitute), minced garlic, salt, and pepper.
  2. Pour the sauce into the Instant Pot and place chicken drumsticks on top. Press the chicken down so it's submerged in the sauce.
  3. Lock the lid and cook on high pressure for 20 minutes.
  4. Once done, use the quick release method to let the steam out.
  5. Turn on the sauté function and let the sauce simmer and reduce for extra flavor.
  6. Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper.
  7. Transfer the chicken to the baking sheet and broil in the oven for 4 minutes until slightly crisp.
  8. Remove from the oven, pour the thickened balsamic sauce over the top, and serve hot over keto tortillas, lettuce cups, or cauliflower rice.
