Ingredients

  • ¼ cup grated Parmesan cheese
  • ½ tsp garlic powder
  • Salt and black pepper, to taste
  • 2 cups cauliflower florets
  • 1–2 tbsp melted butter (for roasting cauliflower)

Instructions

  1. Preheat your oven to 350°F (175°C). Line a baking sheet with aluminum foil.
  2. Place each chicken breast between two pieces of parchment paper and pound flat with a meat mallet until even in thickness.
  3. Lay each chicken breast flat. Top with a slice of ham and a slice of Swiss cheese, then roll tightly.
  4. Dip each chicken roll in the beaten egg to coat it completely.
  5. In a food processor, combine pork rinds, almond flour, Parmesan cheese, garlic powder, salt, and pepper. Pulse into fine crumbs.
  6. Roll the chicken in the crumb mixture until evenly coated and place on the prepared baking sheet.
  7. In a bowl, toss cauliflower florets with melted butter and spread around the chicken on the baking sheet.
  8. Bake for 45 minutes, or until the chicken is cooked through and the crust is golden brown (internal temp 165°F).
  9. Let rest for a few minutes before slicing and serving.
