Ingredients

  • 1 quart chicken stock
  • 2/3 cup water

  • ⅔ cup heavy cream

Instructions

  1. Heat olive oil in a large pot over medium heat.
  2. Add the chopped onion, garlic, and celery along with a pinch of salt and pepper.
  3. Sauté for about 8 minutes until vegetables are tender and aromatic.
  4. Pour in the chicken stock and water, then stir in the roasted bell peppers.
  5. Bring the mixture to a boil, then reduce heat, cover, and let simmer for 5 minutes.
  6. Remove from heat and blend the soup using an immersion blender until smooth and creamy. (You can also use a standard blender, but blend in batches and handle with care.)
  7. Stir in the heavy cream and adjust salt and pepper to taste.
  8. Top each serving with freshly grated parmesan cheese and serve hot.
