Ingredients

  • 3 egg whites

  • 1½ lb ground beef
  • 1 yellow onion, diced
  • 4 garlic cloves, minced
  • 14 oz crushed tomatoes
  • 1 tbsp chili powder
  • 1 tbsp Dijon mustard or powder
  • 1 tbsp red wine vinegar
  • 4 tbsp tomato paste
  • 2 tsp salt
  • ¼ tsp ground black pepper

For Serving:

  • ½ cup mayonnaise
  • 6 oz shredded cheese (cheddar or your favorite)

Instructions

  1. Preheat oven to 350°F (175°C). In a large bowl, combine almond flour, psyllium husk, baking powder, and salt.
  2. Add cider vinegar and egg whites to the dry ingredients. Then pour in boiling water and whisk quickly for about 30 seconds to form a dough.
  3. Shape the dough into 5–8 rolls and place on a parchment-lined baking sheet. Bake for 55 minutes. Let cool.
  4. Meanwhile, heat olive oil in a pan over medium heat. Add onion and garlic; sauté until softened.
  5. Add ground beef and cook until browned. Stir in crushed tomatoes, tomato paste, chili powder, mustard, red wine vinegar, salt, and pepper.
  6. Lower heat and simmer for 10 minutes, allowing flavors to blend.
  7. Slice each bun and fill with sloppy joe mixture. Top with shredded cheese and a spoonful of mayonnaise. Serve warm.
