Ingredients
- 1 cup textured vegetable protein (TVP)
- 1 packet taco seasoning mix
- 2 tomatoes, diced
- 1 bell pepper, sliced into strips
- 3 cups baby spinach
- 2 tablespoons avocado oil
- Salt and pepper, to taste
Directions
- In a bowl, stir together the TVP and taco seasoning mix.
- Pour in 2 cups of boiling water and let it soak for 10 minutes until TVP softens.
- Heat the avocado oil in a skillet over medium heat.
- Add the seasoned TVP to the skillet and cook, stirring, for 2–3 minutes.
- Stir in the baby spinach and cook for another minute or until slightly wilted.
- Season with salt and pepper as needed, then serve hot.
