This Keto Taco Skillet is a fast, flavorful meal that’s perfect for busy weeknights. Using textured vegetable protein (TVP) seasoned with taco spices, combined with fresh vegetables and spinach, it’s a nutritious, low-carb recipe that fits perfectly into your keto lifestyle.


Ingredients

  • 1 cup textured vegetable protein (TVP)
  • 1 packet taco seasoning mix
  • 2 tomatoes, diced
  • 1 bell pepper, sliced into strips
  • 3 cups baby spinach
  • 2 tablespoons avocado oil
  • Salt and pepper, to taste

Directions

  1. In a bowl, stir together the TVP and taco seasoning mix.
  2. Pour in 2 cups of boiling water and let it soak for 10 minutes until TVP softens.
  3. Heat the avocado oil in a skillet over medium heat.
  4. Add the seasoned TVP to the skillet and cook, stirring, for 2–3 minutes.
  5. Stir in the baby spinach and cook for another minute or until slightly wilted.
  6. Season with salt and pepper as needed, then serve hot.
