Keto Vegan Cauliflower Fried Rice – Low-Carb, Flavor-Packed & Easy


This keto vegan cauliflower fried rice is a tasty and healthy alternative to traditional fried rice, using finely grated cauliflower to keep carbs low while packing in flavor and nutrients.

Ingredients:

  • 1 medium head cauliflower, riced (about 4 cups)
  • 1 cup diced bell peppers (red, yellow, or green)
  • 1/2 cup diced carrots
  • 1/2 cup green peas (fresh or frozen)
  • 2 cloves garlic, minced
  • 1 tablespoon grated ginger
  • 3 tablespoons coconut aminos or tamari (gluten-free soy sauce)
  • 2 tablespoons sesame oil
  • 2 green onions, sliced
  • Salt and pepper to taste
  • Optional: toasted sesame seeds and chopped cilantro for garnish

Instructions:

  1. Heat sesame oil in a large skillet over medium heat.
  2. Add garlic and ginger; sauté for 1-2 minutes until fragrant.
  3. Add diced bell peppers, carrots, and peas; cook for 4-5 minutes until vegetables soften.
  4. Add cauliflower rice to the skillet, stirring well to combine.
  5. Pour in coconut aminos or tamari, season with salt and pepper, and stir-fry for 5-7 minutes until cauliflower is tender but not mushy.
  6. Remove from the heat and mix in sliced green onions.
  7. Garnish with toasted sesame seeds and cilantro if desired. Serve hot.
