Ingredients:
- 1 medium head cauliflower, riced (about 4 cups)
- 1 cup diced bell peppers (red, yellow, or green)
- 1/2 cup diced carrots
- 1/2 cup green peas (fresh or frozen)
- 2 cloves garlic, minced
- 1 tablespoon grated ginger
- 3 tablespoons coconut aminos or tamari (gluten-free soy sauce)
- 2 tablespoons sesame oil
- 2 green onions, sliced
- Salt and pepper to taste
- Optional: toasted sesame seeds and chopped cilantro for garnish
Instructions:
- Heat sesame oil in a large skillet over medium heat.
- Add garlic and ginger; sauté for 1-2 minutes until fragrant.
- Add diced bell peppers, carrots, and peas; cook for 4-5 minutes until vegetables soften.
- Add cauliflower rice to the skillet, stirring well to combine.
