This keto vegan cauliflower rice stir-fry is an easy, nutritious, and delicious low-carb alternative to traditional fried rice. Packed with vibrant vegetables and rich seasonings, it’s perfect for a speedy weeknight dinner or meal prep.

Ingredients:

  • 1 medium head of cauliflower, grated into rice-sized pieces
  • 1 cup chopped bell peppers (red, yellow, or green)
  • 1 cup chopped broccoli florets
  • 1/2 cup diced carrots
  • 2 cloves garlic, minced
  • 2 tablespoons coconut aminos or tamari
  • 2 tablespoons olive oil or avocado oil
  • 1/2 teaspoon ground ginger
  • Salt and pepper to taste
  • Optional: chopped green onions and sesame seeds for garnish

Instructions:

  1. Heat oil in a large skillet over medium heat.
  2. Add garlic and sauté for 1 minute until fragrant.
  3. Add bell peppers, broccoli, and carrots; cook for 5 minutes, stirring occasionally.
  4. Stir in the cauliflower rice and cook for another 5–7 minutes, until tender.
  5. Add coconut aminos, ground ginger, salt, and pepper; stir well.
  6. Cook for 2 more minutes to combine flavors.
  7. Serve garnished with green onions and sesame seeds if desired.
