Ingredients

  • ½ cup golden flaxseed meal
  • ½ cup + 3 tbsp almond flour
  • 1½ tbsp granulated erythritol
  • 1 tbsp unsweetened vanilla whey protein powder
  • ¼ tsp baking soda
  • ½ tsp organic baking powder
  • ¼ tsp xanthan gum
  • Salt, to taste
  • 1 organic egg (white and yolk separated)
  • 1 whole organic egg
  • 2 tbsp unsweetened almond milk
  • 1½ tbsp unsalted butter
  • 3 oz plain Greek yogurt

Directions

  1. Preheat and lightly grease your waffle iron.
  2. In a large bowl, whisk together flaxseed meal, almond flour, erythritol, protein powder, baking soda, baking powder, xanthan gum, and salt.
  3. In a second bowl, beat the egg white until stiff peaks form.
  4. In a third bowl, mix the egg yolk, whole egg, almond milk, melted butter, and Greek yogurt until well combined.
  5. Combine the egg mixture with the dry ingredients. Gently fold in the beaten egg whites.
  6. Pour ¼ cup batter into the preheated waffle iron. Cook for 4–5 minutes or until golden brown. Repeat with remaining batter.
