Ingredients

  • 4 boneless, skinless chicken breast halves (about 12 oz total)
  • 4 slices deli ham (sugar-free)
  • 4 slices Swiss cheese
  • 1 large egg, well whisked
  • 2 oz pork rinds
  • ¼ cup almond flour
  • ¼ cup grated Parmesan cheese
  • ½ tsp garlic powder
  • Salt and pepper, to taste
  • 2 cups cauliflower florets
  • 1–2 tbsp melted butter (for tossing cauliflower)

Instructions

  1. Preheat your oven to 350°F (175°C) and line a baking sheet with foil.
  2. Place each chicken breast between two pieces of parchment paper. Pound flat with a meat mallet until even in thickness.
  3. Lay out the flattened chicken, then layer with one slice of ham and one slice of Swiss cheese. Roll tightly.
  4. Dip each chicken roll in the whisked egg to coat.
  5. In a food processor, pulse together the pork rinds, almond flour, Parmesan, garlic powder, salt, and pepper until finely ground. Pour onto a plate.
  6. Roll the egg-coated chicken rolls in the crumb mixture until fully coated, then place them on the prepared baking sheet.
  7. Toss cauliflower florets with melted butter and spread them on the same sheet, around the chicken rolls.
  8. Bake for about 45 minutes or until the chicken is golden and cooked through (internal temp 165°F).
