Ingredients:

  • 2 large eggs
  • 1/4 cup whole milk ricotta cheese
  • 1/2 cup chopped Swiss chard (stems removed)
  • 1 tbsp olive oil or butter
  • Salt and pepper, to taste

Directions:

  1. In a small bowl, beat the eggs with salt and pepper.
  2. Heat olive oil or butter in a skillet over medium heat. Sauté Swiss chard until wilted, about 2–3 minutes.
  3. Pour the eggs into the skillet, swirling to cover the base. Let cook undisturbed for about 1–2 minutes.
  4. Dollop ricotta on one half of the omelet, then fold the other half over.
  5. Cook for another minute until the omelet is set and warmed through. Serve immediately.
