- 2 lbs pork sausage meat

- 4 cups beef stock

Directions
- Heat a large pot over medium heat and add avocado oil.
- Add the sausage meat and brown it for about 3 minutes on all sides.
- Season with salt and black pepper. Add the chopped green bell pepper and continue cooking for another 3 minutes.
- Mix in the chopped jalapeños and tomatoes. Stir well and cook for 2 more minutes.
- Add the spinach, stir again, close the lid, and cook for 7 minutes.
- Pour in the beef stock. Add Italian seasoning, cumin, onion powder, garlic powder, chili powder, and more salt and pepper to taste. Stir thoroughly.
- Close the lid and simmer for 30 minutes.
- Uncover the pot and let it simmer for an additional 15 minutes to enhance the flavors and reduce the liquid slightly.
